You can use chicken broth from cartons or make your own chicken broth from a roasted chicken (recipe here). It’s a quick dump & go recipe – toss everything into the pot, including the noodles and you’ll have homemade chicken noodle soup without all the extra work.

EASY Instant Pot Chicken Noodle Soup Recipe

Ingredients

  • 8 Cups Chicken Broth, (2 - 32 oz Cartons)
  • 8 oz Noodles
  • 1 Cup Water
  • 1 Tablespoon Chicken Bouillon
  • 4 Small Carrots, thinly sliced
  • 2 Celery Stalks, chopped
  • Salt & Pepper to taste
  • Chopped Parsley for garnish
  • Shredded Chicken from a rotisserie chicken, (optional)

Method

  • 1)

    Pour 8 Cups of Chicken Broth into the Instant Pot, add 1 Cup of Water, 1 Tablespoon of Chicken Bouillon, sliced carrots, chopped celery and 8oz of Noodles. Seal the lid, choose High Pressure / Manual and set for half the time on the noodle package (if it says 8 Minutes on the noodle package, then set the Instant Pot for 4 Minutes). When the timer is up, switch the knob to venting (have a towel ready in case it splatters). When the pin drops, open the lid. The soup will be under seasoned, so taste and season more with salt and pepper (I usually have to add 2 Teaspoons of Kosher Salt). If you have leftovers from a rotisserie chicken, shred and add it to the pot. Garnish with chopped parsley. Enjoy!
