Mid-Autumn Festival or Tết Trung Thu is an ancient festival considered “children’s day” in Vietnamese culture. It’s day to celebrate the harvest, spend quality time with your kids – spoiling them with toys, their favorite foods, paper lanterns & treats such as mooncakes. I made Snow Skin Mooncakes the other day and wanted to make another batch of mooncakes today, but I didn’t have a lot of time so I came up with this quick and easy recipe on the fly and had all the ingredients on hand – only 4 ingredients needed and no baking or cooking involved. This version is obviously very untraditional, but they look beautiful and taste delicious – the flavor is very reminiscent of the cake coating on Good Humor Strawberry Shortcake Ice Cream Bars. They can sit out for a few hours if it’s cool, around 72F or cooler. The texture can get too soft if it’s hot

I found your recipe in a Trader Joe’s group several years ago. I made them for my daughter’s birthday back then and your mold suggestion was terrific. I received many compliments at the party. I just made these today with the kids to celebrate Lunar New Year using separate freeze-dried raspberry, strawberry, and blueberry “dust”. The raspberry is phenomenal! 5 stars for a yummy recipe and a gentle, fun way to introduce and celebrate different cultures with the kids
