Molten Chocolate Lava Cakes are one of the most delicious desserts for anyone who loves chocolate. It’s cooked just the right amount of time so the outside of the cake sets and the middle is a gooey chocolate “lava” center. This is usually on the dessert menu at fine dining restaurants, but it’s very easy to make at home. I’ve included instructions for the Instant Pot pressure cooker and the Instant Omni Plus Toaster Oven.

The main flavor component of this dessert comes from the cocoa powder, so use your favorite high quality cocoa powder. My current favorite is Guittard Cocoa Rouge (purchase here), it’s a red dutch-process cocoa powder. It’s wonderful for dusting and the chocolate flavor is intense – it’s amazing.

Molten Lava Cakes made in the Instant Omni Plus Oven have a brownie texture on the outside, gooey center and higher rise –  there’s a greater contrast of texture.  This version is what you’d get at a restaurant.

Instant Pot Molten Chocolate Lava Cake Recipe + (Instant Omni Plus Oven)

Ingredients

  • ½ Cup Salted Butter (1 Stick)
  • ½ Cup Cocoa Powder
  • 2 Large Eggs + 1 Egg Yolk
  • 1 Cup Granulated Sugar
  • ¼ Cup All Purpose Flour
  • 4 - 4oz Ceramic Ramekins

Method

  • 1)

    Melt 1 stick of Butter in a sauce pan on low heat. Once the butter has melted, remove the pan from the heat and let cool for 3 minutes, then add 2 Eggs + 1 Egg Yolk, whisk very well. Add ½ Cup Cocoa, 1 Cup of Sugar, ¼ Cup Flour and stir to combine everything until it looks smooth and shiny.

    Coat the sides of the ramekins very well with butter. Trace the bottom of the ramekins on parchment paper and cut out circles to line the bottom of the ramekin. This step is important because it helps release the lava cakes – without the parchment, the cakes get stuck to the ramekins (you can skip this step if you plan on serving the lava cakes in the ramekins). Divide the batter evenly between the 4 ramekins (about ½ Cup each).

    INSTANT POT Method: Pour 1 Cup of Water into the Instant Pot, place the trivet into it, stack the ramekins on top. Seal the Instant Pot and set for 9 Minutes High Pressure. Once the timer is up, do a quick release of the steam by switching the knob to venting. Once the pin drops, open the lid. Remove the ramekins, use a paper towel to dab off any condensation on top of the cakes and let them cool for 5 minutes. Use oven mitts to handle the ramekins since they will still be hot, run a pairing knife along the edge of each cake and flip the cakes out onto plates. Dust with powdered sugar and serve with berries and vanilla ice cream. Enjoy!

    INSTANT OMNI PLUS OVEN Method:
    Choose Bake and set at 400°F for 9 minutes with Convection On. Once the oven is done pre-heating, place the ramekins in. Remove from the Omni and let them cool for 5 minutes. Use oven mitts to handle the ramekins since they will still be hot. Use a pairing knife and run it along the edge of each cake, then flip them out onto plates. Dust with powdered sugar and serve with berries and vanilla ice cream. Enjoy!

    *You can also serve the cakes inside the ramekins if you don’t want to fuss with flipping them out onto a plate.

      Hello, yes you can, try 425°F for 8 Minutes
