Serves: 4-8 Waffles

These delicious aromatic pumpkin waffles are perfect for breakfast or brunch. You could even serve this with vanilla ice cream for dessert. I made these today for breakfast and topped them homemade whipped cream, sometimes I’ll add pecan or walnuts as well. The entire house smells heavenly and my kids really loved them (they even asked for seconds)!

I use a Cuisinart Belgian Waffle Maker and this recipe makes 4 Belgian waffles (¾ Cup batter per waffle). If you’re using a heart waffle maker, it will make 8 waffles (generous ⅓ Cup of batter per waffle).

INGREDIENTS

  • 1 Cup Pumpkin Purée
  • 1⅓ Cup All Purpose Flour
  • 2 Large Eggs
  • 1 Cup Whole Milk
  • 4 Tablespoons Melted Unsalted Butter
  • ¼ Cup Brown Sugar
  • 1½ Teaspoons Pumpkin Pie Spice
  • 2 Teaspoons Baking Powder
  • ½ Teaspoon Baking Soda
  • ¼ Teaspoon Fine Sea Salt
  • Maple Syrup

OPTIONAL TOPPINGS

  • Chopped Pecans or Walnuts
  • Whipped Cream

METHOD

  • 1)

Pre-heat your oven to 225°F. Combine all the dry ingredients. In a large bowl add 1⅓ Cup All Purpose Flour, 1½ Teaspoons Pumpkin Pie Spice, ¼ Cup Brown Sugar, 2 Teaspoons Baking Powder, ½ Teaspoon Baking Soda, ¼ Teaspoon Salt and mix well with a whisk and set aside.

  • 2)

In another large bowl, add 2 Large Eggs and whisk them until they look foamy. Add 1 Cup of Whole Milk, 1 Cup of Pumpkin Puree, and 4 Tablespoons of Melted Butter and stir until it looks smooth and even. Add the dry ingredients, gently stir just until the flour is absorbed. Let the batter rest for a few minutes while you heat up the waffle maker.

  • 3)

Pour the appropriate amount of batter needed for your waffle maker. Leave it in long enough to cook or the waffle will separate when opening the maker. Keep them warm in a 225°F degrees oven directly on the rack while making the rest of the waffles, the waffles will crisp up a little bit after being in the oven. You can also top with walnuts, pecans or whipped cream if you prefer. Serve with maple syrup and enjoy!

I want to try these beautiful waffles immediately! You know, I could not stand waffles before, no matter what topping or stuffing they were flavored. I never even ordered them in a cafe and refused to try if my friends gave me a bite. But once I tried my friend’s branded waffles when I was visiting her, and since then this is one of my favorite desserts! Usually I cook only according to her recipe, but I really liked your idea. I think I will allow myself to step back from the rule, and today I will cook pumpkin waffles according to your recipe, because I really like all desserts with the addition of pumpkin. Thank you for the detailed and original recipe!
