Very few “superfoods” taste as great as hummus. Even my kids will clamor at the table waiting for a bowl of this creamy delight. Each ingredient packs a major dose of health benefits. Protein, healthy fats, fiber and vitamin C are just a few reasons why hummus is a crucial part of the Mediterranean Longevity Diet.

With that said, let’s be honest. We love hummus because it’s delicious! The contrast of creamy garbanzos and sharp lemon juice on a crisp pita chip hits the spot any day of the week.

I’ve been fine tuning this recipe for the last few years. Learning tips and tricks along the way; this is the apex of my hard work. I’ve simplified the entire process using the Instant Pot. No more overnight soaks. This is the best hummus you’ll ever have.

Quick Instant Pot Hummus Recipe

Ingredients

  • 2 Cups Dried Garbanzo Beans / Chickpeas
  • 6 Tablespoons Tahini
  • ¼ Cup Lemon Juice
  • ¼ Cup Water
  • ½ Cup Olive Oil
  • 3 Whole Garlic Cloves
  • ½ Teaspoon Ground Cumin
  • ½ Teaspoon Paprika
  • 3 Teaspoons Sea Salt

Method

  • 1)

    Place 2 Cups of Dried Garbanzo Beans into your Instant Pot and add 8 Cups of Water. Seal the lid on your Instant Pot and set it for High Pressure / Manual for 40 Minutes. When it’s done, wait an additional 20 minutes while it does a natural pressure release then switch the knob to venting. When the pin drops, open the lid and pour the garbanzo beans into a colander. Rinse with cold water until the beans are cool.

    Add the cooled garbanzo beans to your food processor along with 6 Tablespoons of Tahini, ¼ Cup of Lemon Juice, ¼ Cup of Water, 3 Whole Garlic Cloves, ½ Teaspoon of Cumin, ½ Teaspoon of Paprika and 3 Teaspoons of Sea Salt. Turn on your food processor and let it blend for a few minutes. Once it starts looking like a paste, while the food processor is still on, drizzle in ½ Cup of Olive Oil. Let it blend for a few more minutes (you can add a little more water if you want a thinner consistency) . Taste and season with more salt or add more lemon juice to your liking.

    Garnish with a drizzle of olive oil and a sprinkle of paprika before serving. Enjoy!
