Egg Bites have become one of the most popular dishes for breakfast or high protein snack.  Most people know of them from Starbucks, but you can buy them at grocery stores and even Costco now.  Egg Bites are similar to frittatas, but the texture is smoother and creamier. I’m going to show you how to make them at home using a KitchenBoss Sous Vide Cooker This recipe is a great starting point and you can customize them by adding other ingredients like bacon, sausage or even chorizo.

Sous Vide Cheddar & Scallion Egg Bites Recipe

Ingredients

  • 7 Large Eggs
  • 1 Cup Shredded Cheddar
  • ¼ Cup Cream Cheese or Cottage Cheese
  • ¼ Cup Heavy Cream
  • 2 Scallions, chopped, green parts only
  • ¼ Teaspoon Salt
  • Few dashes of Hot Sauce
  • 1 Teaspoon Melted Butter
  • 6 4oz Mason Jars

Method

  • 1)

    Attach the sous vide bracket to a large pot, place the KitchenBoss Sous Vide Cooker into the bracket and fill with enough water so it’s above the minimum line, but below the maximum line. Set temp at 170°F for 1 Hour. The KitchenBoss Sous Vide Cooker will preheat the water and beep when it’s at the correct temp.

  • 2)

    While the water is pre-heating, prepare the egg bite batter. Add 7 Large Eggs, 1 Cup Shredded Cheddar, ¼ Cup Cream Cheese, ¼ Cup Heavy Cream, ¼ Teaspoon Salt, a few dashes of Hot Sauce into a blender and blend just until the mixture is smooth and everything is combined (about 20 seconds). Turn down to the slowest speed, add the chopped Scallions and let it mix for 3 seconds, then turn off.

  • 3)

    Use the melted butter to coat the interior of six 4oz mason jars. Pour the egg bite batter into the mason jars about 80% full. Attach the lids and close to fingertip tightness. Use only your fingertips to screw on the ring, if they are too tight, the air pressure isn’t able to release from the jars.

  • 4)

    Once the Sous Vide Cooker is at the correct temp, use kitchen tongs to lower the jars into the bottom of the pot and cook for 1 hour. When the timer is up, remove the jars. Once the jars are cool enough to handle, open the lids, run a pair knife along the edge and flip onto a plate to serve and garnish with more chopped scallions. You can also refrigerate these for up 5 days before serving. Enjoy!
