I’m sharing a sous vide recipe for cooking Onsen Eggs (Japanese Hot Spring Eggs) using an Instant Pot Pro, the egg whites are silky and softly set, the yolks have a custard-like texture.  It’s a usually cooked low and slow in a hot spring to get that unique texture, but if you have an Instant Pot model with sous vide or a sous vide immersion circulator you can easily make them at home.  I love having it with gyudon (Japanese beef bowl), but you can also enjoy it simply with soy sauce over rice or with noodle soup.

Instant Pot Sous Vide Onsen Egg Recipe

A sous vide recipe for onsen eggs (Japanese hot spring egg), whites will be silky and softly set, and the yolk will be warm and have a custard-like texture.

Ingredients

  • 1-6 Eggs

Method

  • 1)

    Fill the liner pot with 5 inches of very hot water from the sink. Take the eggs out from the fridge and set aside. Choose Sous Vide, set it for 1 Hour 10 minutes at 145ºF and Press Start. Seal the Instant Pot lid, the water will preheat to the correct temp, this can take anywhere from 15-30 minutes.

    **You can also use any brand sous vide immersion circulator with this same temp and timing. Just be sure to use the minimum amount of water required by your specific model.

  • 2)

    You’ll hear a beep once the Instant Pot is at the correct temp, use kitchen tongs to gently add 1-6 eggs into the pot. Seal the lid and wait 1 hour 10 minutes. Remove the eggs from the water and Enjoy!
