I’m sharing a sous vide recipe for cooking Onsen Eggs (Japanese Hot Spring Eggs) using an Instant Pot Pro, the egg whites are silky and softly set, the yolks have a custard-like texture. It’s a usually cooked low and slow in a hot spring to get that unique texture, but if you have an Instant Pot model with sous vide or a sous vide immersion circulator you can easily make them at home. I love having it with gyudon (Japanese beef bowl), but you can also enjoy it simply with soy sauce over rice or with noodle soup.
Let the eggs sit out so they get to room temp while the Instant Pot get’s the water to the proper temp
You can also serve it on it’s own with a little dashi stock + soy sauce
