If there’s one thing that will keep you sane during keto, it will be these amazing brownies. They are so delicious, you’d have no clue that they were keto if you tried them, they’re made with almond flour and sweetened with Lakanto Monkfruit Sweetener (only 1.6g net carbs per brownie!!!) The texture is very fudgy, especially when they are still warm. I’ve also tried making them with raw coconut oil and coconut cream, but grass-fed butter and heavy cream just tastes so much better.

Ingredients
- 1½ Cup Almond Flour
- ¾ Cup Dutch Processed Cocoa Powder
- ¾ Cup Lakanto Monkfruit Sweetener
- ½ Cup (1 Stick) Salted Grass-fed Butter, melted
- ½ Cup Heavy Cream
- 3 Large Eggs
- ½ Teaspoon Baking Powder

Pre-heat oven to 325°F. Line an 8 x 8in pan with parchment. In a large bowl, add 1½ Cup Almond Flour, ¾ Cup Dutch Processed Cocoa Powder, ¾ Cup Lakanto Monkfruit Sweetener, ½ Teaspoon Baking Powder and stir well with a whisk to combine.
*Optional, place all the dry ingredients into a food processor & process for 60 seconds. Creates a finer almond flour mix, which results in a nicer brownie texture

In a separate bowl, add 1 Stick of melted Butter, ½ Cup Heavy Cream, 3 Large Eggs, whisk vigorously until the eggs look complete combined. Pour this into the bowl with the dry ingredients, stir well with a whisk until the batter is completely smooth and evenly combined. Pour batter into the lined 8 x 8in pan. Bake at 325°F for 26 minutes. Once cool enough to handle, cut into 16 squares – texture is gooey when they’re still a little warm. Store in a sealed container once they are completely cooled. You can refrigerate them if you prefer, the texture gets firmer and chewier in the fridge, almost like chocolate fudge.
*If you’re used to checking doneness with a toothpick, it will come out with batter on it if you bake it according to my timing, the top should be set and there should be a very slight jiggle in the middle if you shake the pan. You can bake until a toothpick comes out clean if you prefer your brownies more done (not fudgy).
