Fall is my favorite time of year, the weather gets more mild, Halloween is approaching and Trader Joe’s gets tons of pumpkin goodies! Every year I love trying out all the Trader Joe’s pumpkin products, and one of  my favorite items is the Pumpkin Brioche Twist, it’s amazing for French Toast – I wanted to give my French Toast an upgrade today by making a crunchy version, so I used Trader Joe’s Maple Pecan Clusters Cereal as the coating.  Not only does the cereal give it a great crunchy texture, it also adds a wonderful flavor.  This Crunchy Pumpkin French Toast so delicious and such a treat, you could even serve it as a dessert.

Trader Joe’s Crunchy Pumpkin French Toast Recipe

Ingredients

  • 6 Slices Trader Joe’s Pumpkin Brioche Twist
  • 2 Cups Trader Joe’s Maple Pecan Clusters Cereal (or Cornflakes), crushed into coarse crumbs
  • 3 Large Eggs
  • ½ Cup Half & Half or Cream
  • 2 Tablespoons Salted Butter, divided
  • 1 Tablespoon Sugar
  • Pinch of Salt

Method

  • 1)

    Pre-heat your oven to 375°F and have a baking sheet covered with parchment or a silpat. Put the crushed cereal into a large bowl or plate. In a large bowl, add 3 Large Eggs, ½ Cup Half & Half, 1 Tablespoon Granulated Sugar, Pinch of Salt and whisk very well until eggs are completely combined (you shouldn’t see any egg whites).

    Dip each piece of brioche into the egg mixture for 2 seconds on each side, then coat well with crushed cereal, gently press the cereal into the brioche to get it to adhere.

  • 3)

    Use medium-high heat and large non-stick skillet. Add 1 Tablespoon of Salted Butter, once the pan is hot cook 3 slices at once, about 1-2 minutes per side or until it’s lightly golden, place onto the baking sheet. Add the another 1 Tablespoon of Butter to pan again and cook the last 3 slices, these may brown quicker since the pan will be hotter, place them onto the baking sheet. Put the pan into the pre-heated oven for 5 minutes. Drizzle on some warm Trader Joe’s Fleur de Sel Caramel Sauce or Maple, top with whipped cream and a sprinkle of Pumpkin Pie Spice. Enjoy!
