Butter Mochi is a very popular treat in Hawaii, it’s made with Mochiko (Japanese Sweet Rice Flour) and a few other ingredients typically used to make cake. It’s the perfect example of modern day Hawaiian cuisine (local food) which is a fusion from multiple ethnic groups. I’m going to show you how to make Ube Butter Mochi using the Trader Joe’s Ube Mochi Pancake Mix – the batter is super simple to mix up and you end up with butter mochi that has a satisfying chewy, bouncy texture with crisp edges. *Watch my 20-second YouTube Recipe Video here

    Pre-heat oven to 350°F. Use a large bowl and add 1 box of Trader Joe’s Ube Mochi Pancake Mix, 2 Large Eggs, 5 Tablespoons Melted Salted Butter, 1¼ Cup Milk, 1¼ Cup Water, ½ Cup Sugar, ¼ Teaspoon Ube Flavoring – stir well with a whisk until the batter is smooth.

    Pour into an 8×8 inch pan lined with parchment paper. Bake at 350°F for 70 minutes or until the top & edges are golden brown. Let it cool to room temp before cutting into squares. Enjoy!
