If you love spicy food like I do, you’ll love these Mango Habanero Wings! The initial sweetness gives way to a subtle burn that becomes more addictive with each bite. My goal was to create a wing that wasn’t a face-melting experience; but one that allowed you to explore the complex balance of sweet and spicy.  Contrasting flavors have always lured me in, and this is the ONE flavor combo I could not put down – these are seriously addicting!

I air fried the wings in an Instant Omni Pro, but any air fryer should work well. If you have the basket type, you’ll probably have to cook the wings in two batches. Baking Powder might sound like odd ingredient for wings, but it slightly changes the ph level of the chicken, which helps to lower the temperate at which the Miallard reaction occurs, helping to develop a brown, crispy texture.Instant Omni Pro Air Fryer

Ingredients

  • 2.5 Pounds Chicken Wings (≈18 Flats and Drumettes)
  • ⅓ Cup Mango Chutney
  • 1½ Tablespoons Habanero Hot Sauce
  • 1 Tablespoon Baking Powder
  • 1 Teaspoon Cornstarch
  • ½ Teaspoon Fine Sea Salt
  • 1 Teaspoon Paprika
  • 4 Tablespoons Salted Butter
  • Habanero Powder, *optional - add to taste

Method

  • 1)

Add 1 Tablespoon Baking Powder, 1 Teaspoon Corn Starch, ½ Teaspoon Fine Sea Salt, 1 Teaspoon Paprika into a large bowl and stir to combine. Add the chicken wings and toss to coat evenly. Brush the basket or rack with a little bit of oil so the wings don’t stick and place the wings into the air fry basket/rack. Pre-heat Air Fryer at 400°F, air fry for 30 Minutes and flip half way through.

OVEN METHOD: Use an oven safe rack and place it on a baking sheet, lightly oil the rack, then stack the wings on the rack. Preheat oven to 425°F and bake for 50 minutes flip the wings every 15 mins.

**Make sure you are using Baking Powder and NOT Baking Soda – baking soda will make the wings inedible.

  • 2)

Make the Mango-Habanero wing sauce, by adding ⅓ Cup Mango Chutney and 1½ Tablespoons Habanero Hot Sauce into a blender and blend until smooth. Add the sauce to a pot, add 4 Tablespoons Salted Butter, turn to med-high heat, once it starts to bubble turn off the heat, stir well to combine the butter (*if you want the sauce xxx spicy, add ½ Teaspoon of Habanero Powder or more to taste). Toss the wings in the sauce and plate. Garnish with chopped cilantro or scallions. Enjoy!
