This is a super easy recipe for delicious, homemade Coconut Syrup. It’s a perfect syrup for waffles & pancakes – especially ube mochi waffles. You could also use this as a drizzle for ice cream or as a sweetener for coffee.  This is inspired by the coconut syrup served at King’s Hawaiian Restaurant in Torrance, CA – they serve it with French Toast

I made this to go with my Trader Joe’s Ube Mochi waffles. The syrup was coconutty and delicious on the waffles. So easy to make and a yummy treat! Thank you so much.
