This is a super easy recipe for delicious, homemade Coconut Syrup. It’s a perfect syrup for waffles & pancakes – especially ube mochi waffles. You could also use this as a drizzle for ice cream or as a sweetener for coffee. This is inspired by the coconut syrup served at King’s Hawaiian Restaurant in Torrance, CA – they serve it with French Toast

Ingredients
- 13.5 oz Canned Coconut Milk
- ⅔ Cup Granulated Sugar
- 4 Teaspoons Cornstarch
- ⅛ Teaspoon Fine Sea Salt
Method

Add ⅔ Cup Granulated Sugar and 4 Teaspoons Cornstarch into a bowl, stir with a whisk until combined. Add 13.5 oz Can Coconut Milk into a sauce pan, add the sugar and cornstarch mixture along with ⅛ Teaspoon Fine Sea Salt. Stir with a whisk until smooth, use medium heat and simmer for about 3 minutes stirring occasionally, it should get slightly thickened. You can use it immediately. If you have leftover syrup, cover & refrigerate – use within a week (warm it up before using).
