Ice Cream Bread, sounds like a strange recipe right? I forgot about a carton of ice cream I had in the freezer, so it had some freezer burn, didn’t want to waste it so I turned it into yummy Ice Cream Bread! You can use any flavor whole milk ice cream, it will take on a light flavor of whatever you use. You mix melted ice cream  with flour, sugar and baking power –  it’s not quite bread and and it’s not quite cake – it’s similar to quick bread like corn bread or pumpkin bread.  Ice Cream Bread has a tender crumb,  it’s slightly sweet & tastes amazing served warm with butter!

Easy Ice Cream Bread Recipe

Ingredients

  • 2 Cups Whole Milk Ice Cream, melted
  • 1½ Cups All Purpose Flour
  • ⅓ Cup Granulated Sugar
  • 1½ Teaspoons Baking Powder
  • Sprinkles (optional)

Method

  • 1)

    Pre-heat oven to 350˚F. In a large bowl, add 1½ Cup All Purpose Flour, ⅓ Cup Granulated Sugar, 1½ Teaspoons Baking Powder, stir with a whisk to combine. Add 2 Cups melted Ice Cream and stir just until it’s combined.

  • 2)

    Line a 9x5in loaf pan with parchment with a little overhang so you can lift the loaf out. Fill the pan with batter, add sprinkles if you prefer and bake at 350˚F for 45-50 Minutes – a toothpick inserted into the center should come out clean. Under-baking can cause a gummy texture

  • 3)

    Let it cool in the pan for about 15 minutes before removing the loaf from the pan. It’s great while warm, slice and enjoy with Kerrygold butter!
