My husband absolutely loves poached eggs on toast for breakfast. They’re usually a little high maintenance to make the traditional way and don’t always turn out looking perfect, but I’ve started making them in the Instant Pot and they are super easy, quick to make and they look so perfect every time.

I actually have been using egg silicone poachers for years on the stovetop, long before I had an Instant Pot – but they usually would have little bubbles on the surface of the egg, I think it’s from being in direct contact of boiling water. Now that I cooked them on a trivet in the Instant Pot, the eggs have a perfectly beautiful and smooth surface. The egg whites are cooked through and the yolk is still runny and creamy!

I got an awesome Instant Pot set made by Hatrigo that came with the silicone trivet and egg poachers (purchase here) that I’m using in this recipe or you can just purchase the silicone egg poachers here.

Use your fingers or a brush to coat the entire inside of each mold with a little oil. Crack 1 egg into each silicone cup and place them onto the trivet. Pour exactly 1 Cup of water into your Instant Pot, lower the trivet into the pot and seal the lid.

EXTRA LARGE EGGS: Choose High Pressure / Manual and set for 3 minutes. As soon as the timer is up, immediate switch the knob to venting, when the pin drops, open the lid and carefully lift out the trivet.

LARGE EGGS: Choose High Pressure / Manual and set for 2 minutes. When timer is up, wait 30 seconds and switch the knob to venting, when the pin drops, open the lid and carefully lift out the trivet. (use a timer on your phone so they don’t overcook)

***Venting at the correct time is very important, even a 30 second delay will start to overcook the eggs. Use a large spoon to help remove the eggs from the mold. Place on top of a piece of toast, sprinkle on some salt & pepper and add a dab of butter on top. Enjoy!

*This recipe is designed for the silicone egg poachers, if you use something else like ramekins – you’ll need to experiment with cooking times since other materials will conduct heat differently. Living in higher elevation will also affect your cooking times. Don’t use a steamer basket to hold the poachers, it will change the cooking time.
