Geste Shrimp Truck in Kahului is known for having some of the best garlic shrimp on the islands, I’ve been making a copycat of of their Spicy Garlic Shrimp for years, but it’s always been incomplete without their amazing Crab Mac Salad! I’ve never seen anywhere else make Hawaiian-style mac salad like this and if you’ve never tried it, it’s freakin fantastic! The umami is really leveled up with the addition of kani kamaboko and black olives. Hawaiian Crab Mac Salad Recipe (Copycat of Geste Shrimp Truck)

Ingredients

  • 3 oz Imitation Crab Sticks (kani kamaboko)
  • ½ Pound Elbow Macaroni, (8 oz)
  • 1 Small Russet Potato (~0.4 lbs), peeled and cut in half
  • 1½ Cups Best Foods Mayo or Hellmann's
  • 6 Black Olives, coarsely chopped
  • 1 Tablespoon Grated Onion
  • ½ Teaspoon Fine Sea Salt
  • ½ Teaspoon Coarse Ground Black Pepper

Method

  • 1)

    Bring a large pot of water to a rolling boil and add 1 teaspoon of salt, ½ Pound Elbow Macaroni and the potatoes. Cook for 20 Minutes (Yes 20 Minutes, for Hawaiian Mac Salad the macaroni needs to be overcooked and soft). Remove the potatoes and place them into a bowl and mash with a fork. Drain the macaroni in a colander, run cold water over the macaroni until it’s cool and let it drain for about 10 minutes.

    Cut the Imitation Crab Sticks (about 4 sticks) into ⅓ inch pieces, then break them apart with your hands. In a large bowl, add 1½ Cups Best Foods Mayo, Imitation Crab, mashed potatoes, chopped Black Olives, 1 Tablespoon Grated Onion, ½ Teaspoon Fine Sea Salt, ½ Coarse Ground Black Pepper and stir to combine well. Add the cooled macaroni, toss to combine, taste and season more if needed. Cover and refrigerate for at least 30 minutes before serving. Enjoy!
