Instant Pot 3-Ingredient Ice Cream Bread Recipe

This is a simple and yummy quick bread recipe that only uses 3 ingredients: Haagen-Daaz Ice Cream, Self Rising Flour & Sugar. It took my 3 year old daughter 5 minutes to mix up the batter – we used Vanilla Ice Cream, but you can choose from any of their delicious flavors. I’ve only tested this recipe with Haagen-Daaz brand ice cream since they don’t add any fillers or thickeners. It has a similar texture to standard quick breads like corn bread, but it’s slightly sweeter & tastes amazing served warm with butter!

I also made a Green Tea / Matcha version, you can add ½ Teaspoon of Matcha Powder to the sugar before adding it to the batter if you want a stronger green tea flavor.

Instant Pot 3-Ingredient Ice Cream Bread Recipe

Ingredients

  • 14 oz Haagen-Daaz Ice Cream, defrosted in the refrigerator overnight
  • 1 Cup + 2 Tablespoons Self-Rising Flour, (or use All Purpose Flour mixed with 1½ Teaspoons Baking Powder)
  • ¼ Cup Granulated Sugar

Method

  • 1)

    Pour the 14oz container of melted Haagen-Daaz Ice Cream into a large mixing bowl. Add ¼ Cup Granulated Sugar, 1 Cup + 2 Tablespoons Self-Rising Flour and stir with a whisk. The batter should be smooth, but avoid over-mixing (a few tiny lumps are ok). Butter or use cooking spray in your 7-inch non stick bundt pan. Pour the batter into the pan.

    Pour 1½ Cups of water into the Instant Pot. Place the trivet into the pot and place the bundt on top of the trivet. Choose High Pressure / Manual and set for 35 Minutes. When the timer is up, wait 5 minutes for a natural pressure release then switch the knob to venting. When the pin drops, take out the bundt pan and let it cool on the counter for 10-15 minutes. Flip the loaf onto a plate. Slice and serve with butter. Enjoy!
