This is the quickest and easiest method to make Anko (Japanese Sweet Red Bean Paste – Koshian). Using an Instant Pot to pressure cook the adzuki beans only takes 40 minutes, compared to the 2 hours it takes on the stovetop. Homemade anko is so much more delicious than store-bought – perfectly smooth in texture and beautifully balanced in flavor – it’s great for making daifuku mochi, dorayaki, anpan or any other Japanese treats that uses anko.

- 1 Cup Adzuki Beans
- ¾ Cup Light Brown or Granulated Sugar
- ¼ Teaspoon Fine Sea Salt
Method

Pour 3 Cups Water and 1 Cup Adzuki Beans into the Instant Pot, seal the lid and set for 40 Minutes High Pressure. When the timer is up, immediate switch the knob to venting to release the steam. Once the pin has dropped, open the lid. Strain the beans & discard the water.

Immediately place the beans into a food processor and process for 1 minute (add a tiny bit of water if it’s too dry to blend). Place a fine mesh strainer or sieve over a sauce pan or pot, place the beans into the strainer and use a silicone spatula or wooden spoon to press it through, this removes the the bean skins and creates very smooth anko.
*If you don’t have a food processor, you can make chunky bean paste instead (tsubuan), just place the drained beans directly into the pot and move on to step #3

Add add ¾ Cup Light Brown Sugar, ¼ Teaspoon Fine Sea Salt. Use medium-low heat and stir constantly for about 10 minutes. Taste and add more sugar if you prefer it sweeter. It will start off looking very loose and shiny, towards the end, it will look thicker like brownie batter. Set aside to cool completely before using. Refrigerate leftovers in a sealed container for up to 4 days. Enjoy!
