If you’ve only had Swiss Miss or the sad hot chocolate served at coffee shops – you’ve been missing out. Champurrado is the king of all hot chocolate, at least my version is! I’ve made Champurrado with Ibarra chocolate discs & I didn’t think the chocolate flavor was prominent enough so I prefer using pure dark chocolate for the ultimate treat. The masa harina helps create the thick & creamy texture. The cinnamon adds a wonderful depth of flavor and warmth to this luscious drink.

Instant Pot Champurrado Recipe (Thick Mexican Hot Chocolate)

Ingredients

  • 3 Cups Water
  • 3 Cups Milk
  • 3 Cinnamon Sticks
  • 8 oz Dark Chocolate, chopped into small pieces or use chocolate chips
  • ½ Cup Dark Brown Sugar, or 4oz Piloncillo
  • ¼ Cup Masa Harina, or substitute with All Purpose Flour

Method

  • 1)

    Pour 3 Cups of Water into your Instant Pot, add ¼ Cup of Masa Harina, ½ Cup of Dark Brown Sugar and 3 Cinnamon Sticks. Use a whisk to stir the Masa Harina (make sure there are no clumps), seal the Instant Pot lid, choose High Pressure / Manual and set for 3 Minutes. When the timer is up, switch the knob to venting immediately and when the pin drops, open the lid.

    *If you’re using flour instead of masa marina, wait 5 minutes for a natural pressure release before venting to avoid splatter. There still might be a little splatter from the vent, so have a towel ready.

  • 2)

    Press Cancel on the Instant Pot and choose Sauté on Low and set for 3 minutes. Add 8oz of chopped Dark Chocolate and 3 Cups of Milk. When the 3 minutes are up, stir well with a whisk and serve. Enjoy!

    *It’s normal to have small granules of masa in the drink, you can also use an immersion blender to get it ultra smooth.
