Ingredients

  • 12 Large Eggs
  • Green, Red and Yellow Food Coloring
  • White Vinegar
  • 3 Ziplock Bags
  • ½ Cup Mayonnaise
  • 2 Teaspoons Yellow Mustard
  • ¼ Teaspoon Kosher Salt
  • ¼ Teaspoon Onion Powder
  • ¼ Teaspoon Paprika
  • 2 Tablespoons Sweet Relish
  • Pinch of Cayenne

Method

  • 1)

Place 1 Cup of Water in the Instant Pot. Place the eggs into a steamer basket or stack them on top of a trivet. Seal the Instant Pot lid and switch the knob to Sealing. Set for 5 Minutes High Pressure. When the timer is up, wait 5 minutes and switch the knob to Venting to release the steam. When the pin drops, open the lid, remove the eggs and place immediately into a large bowl filled with ice water for 5 minutes. Remove the eggs and dry them off.

  • 2)

Hold an egg in the palm of your hand and use a spoon to tap the shell to make small cracks over the entire shell – repeat for all the eggs.

  • 3)

Place ¼ Teaspoon of Water, ¼ Teaspoon White Vinegar and ¼ Teaspoon food coloring into a ziplock bag (make 3 bags Green, Red and Yellow). Place 4 eggs into each bag and seal the bag – coat each eggs well with the dye. Place into the refrigerator for 30 minutes (do 15 minutes if you want more refined lines).

*If you want to display some whole eggs like in my photos, use brown eggs and don’t wash off the dye, just let them air dry.

  • 4)

Rinse the eggs and peel the shells. Cut the eggs in half and place all the yolks into a large bowl. Add ½ Cup Mayonnaise, 2 Teaspoons Yellow Mustard, ¼ Teaspoon Kosher Salt, ¼ Teaspoon Onion Powder, ¼ Teaspoon Paprika, 2 Tablespoons Sweet Relish and a Pinch of Cayenne to the bowl with the egg yolks – Using a fork mix and smash the yolks until it looks smooth. Spoon or pipe using a open star top into the eggs. Sprinkle more paprika on top before serving. Enjoy!
