Ingredients

  • 12 Large Eggs
  • ½ Cup Mayonnaise
  • 2 Teaspoons Yellow Mustard
  • ¼ Teaspoon Kosher Salt
  • ¼ Teaspoon Onion Powder
  • ¼ Teaspoon Paprika + more for dusting
  • 1 Tablespoon Sweet Relish
  • Pitted Black Olives
  • Fukujinzuke (Red Japanese Daikon Pickes), or Red Beet

Method

  • 1)

Place 1 Cup of Water in the Instant Pot. Place the eggs into a steamer basket or stack them on top of a trivet. Seal the Instant Pot lid and switch the knob to Sealing. Set for 5 Minutes High Pressure. When the timer is up, wait 5 minutes and switch the knob to Venting to release the steam. When the pin drops, open the lid, remove the eggs and place immediately into a large bowl filled with ice water for 5 minutes. Remove the eggs and dry them off.

  • 2)

Peel the shells, cut the eggs in half and place all the yolks into a large bowl. Add ½ Cup Mayonnaise, 2 Teaspoons Yellow Mustard, ¼ Teaspoon Kosher Salt, ¼ Teaspoon Onion Powder, ¼ Teaspoon Paprika, and 1 Tablespoon Sweet Relish to the bowl with the egg yolks – Using a fork mix and smash the yolks until it looks smooth. Spoon or pipe using a large open star top into the eggs.

  • 3)

Place a black olive on top of each egg. Slice the olives into thin circles, then cut them in half to make the legs, and place 8 legs on each egg. If you want to make them black widows spiders, slice red fukujinzuke pickles or thin slices of beets into small triangles, place them on top of the olive in the shape of an hourglass and add a few pinches of Paprika. Happy Halloween and Enjoy!
