Ortega Style Steamed Mussels – something I dream about. My husbands favorite restaurant of all time is Walt’s Wharf in Seal Beach, CA. We had been having date nights there for as long as I can recall. We always started with their steamed clams or mussels—using their housemade sourdough bread to soak up every ounce of the delicious sauce.

We no longer live close to Walt’s and sadly they’ve been closed for the last year. I took matters into my own hands and started from scratch. How can I replicate this complex tasting bowl of shellfish at home? It starts with a butter, garlic, wine sauce – then you add tomatoes, jalapeño and cilantro for Ortega Style – which brings this classic dish over the top

Ortega Style Steamed Mussels with Wine & Garlic Recipe

Ingredients

  • 32 oz Frozen Fully Cooked Mussels
  • 1 Stick Unsalted Butter (8 Tablespoons)
  • 4 Garlic Cloves, minced
  • 1 Scallion / Green Onion, chopped
  • 1¼ Cup White Wine
  • 1 Jalapeño, sliced
  • 2 Small Tomatoes, chopped
  • 1 Tablespoon Chopped Cilantro
  • ¼ Teaspoon Fine Sea Salt

Method

  • 1)

    Place 1 Stick of Butter and ¼ Teaspoon Fine Sea Salt into a pot and melt on med-high heat. Once it’s completely melted, add the minced Garlic, chopped Scallion, sliced Jalapeño and sauté for 1-2 minute (don’t let the garlic brown). Add 1¼ Cup White Wine and 32 oz of Frozen Fully Cooked Mussels. Once it comes to a boil, turn heat down to med-low, cover the pot and simmer for about 5 minutes, the mussels should be open and warmed through. Discard any unopened mussels.

    Taste the wine sauce and season with more salt if needed. Place the mussels into a large serving bowl, and pour the wine sauce over the mussels. Top with chopped Tomatoes and Cilantro & serve with toasted crusty bread. Enjoy!
