Easy Ahi Tuna Poke Bowl, made with all ingredients from Trader Joe’s. Normally poke is made with raw sashimi grade tuna, but Trader Joe’s Sesame Crusted Smoked Ahi Tuna is a wonderful substitute, the only downside is it comes in slices like lox, so you can’t cut the tuna into cubes like you normally would for poke. I also included pickled ginger in my bowl because I always have it in my pantry, but it’s optional and you can pick that up from your local Japanese Market.
I made quick pickled cucumbers for my poke bowl, it’s optional but I think it adds a lovely flavor to the whole dish. In a small bowl, combine 2 Teaspoons Rice Vinegar, ½ Teaspoon Sugar, ½ Teaspoon Fine Sea Salt and stir well. Add 2 sliced Persian Cucumbers and toss to combine and serve immediately.
