Ube Horchata, a delicious fusion of Asian & Mexican flavors 💜 this is super quick and simple version of horchata since I’m using carton Almond & Rice or Coconut Milk + Ube Flavoring which gives it that gorgeous purple color. Horchata is traditional Mexican drink made from rice soaked in water, after the rice is softened, it’s blended with cinnamon and sugar then strained.  Ube is a purple yam that’s used it many sweets & desserts in the Philippines and Hawaii.  The flavor of horchata + ube pair very well together, it’s sweet, nutty with a hint of cinnamon – I also topped it with ube whipped cream for an extra special treat. Ube Horchata Recipe

Ingredients

  • ⅛ Teaspoon Ube Flavoring
  • ⅔ Cup Rice Milk or Coconut Milk
  • ⅔ Cup Almond Milk
  • 3 Tablespoons Granulated Sugar
  • Pinch of Ground Cinnamon

Ube Whipped Cream

  • ⅓ Cup Heavy Whipping Cream, very cold
  • 1½ Teaspoons Granulated Sugar
  • 4 Drops Ube Flavoring

Method

  • 1)

    In a large glass, add 3 Tablespoons Granulated Sugar, a big pinch of Ground Cinnamon, ⅛ Teaspoon Ube Flavoring and ⅔ Cup Almond Milk. Use a handheld milk frother or stir well to dissolve the sugar. Add ⅔ Cup Rice Milk or Coconut Milk and fill the glass with ice.

    *You can make a caffeinated version by adding 1-2 shots of espresso on top

    In another glass, add ⅓ Cup Heavy Whipping Cream (needs to be very cold), 1½ Teaspoons Sugar, 4 Drops of Ube Flavoring. With a handheld milk frother, use a circular + up & down motion to mix until it’s thick & creamy (takes 1-2 mins). You can also use a stand or hand mixer & mix on high speed. Top the Ube Horchata with whipped cream and Enjoy!
