Ube is a purple yam that’s a popular ingredient for sweets and desserts in Asia and Hawaii, it has a lovely nutty flavor, almost like a cross between vanilla & pistachio. Ube desserts are not only popular for their flavor, many people are enamored by the beautiful purple color of ube treats.

Ingredients
- 1½ Teaspoons Ube Flavoring
- 8 Cups Rice Krispies Cereal
- 16 oz Mini Marshmallows, divided
- 7 Tablespoons Salted Butter
- 2 Tablespoons Ube Powder
Method
- 1)
Line a 9x13in pan with parchment paper and set aside. Reserve 2 Cups of Mini Marshmallows. Use high heat and melt 7 Tablespoons of Salted Butter in a large pot until it starts to turn light brown, turn the heat to low and add the marshmallows and stir until melted. Add 1½ Teaspoon Ube Flavoring, 2 Tablespoon Ube Powder and stir until well combined. Turn off the heat, add 8 Cups of Rice Krispie Cereal, stir until the cereal is evenly coated with marshmallows, add the reserved 2 Cups of Mini Marshmallows and stir to distribute evenly.
- 2)
Pour the mixture into the lined pan and even it out, it’s easiest to use a small piece of parchment paper to help even out the top. Place the pan into the refrigerator uncovered for 15 minutes so it firms up. Use the parchment paper to lift up the rice krispie treats out of the pan and cut into squares on a cutting board. *Optional, use a pastry bag with a small hole snipped to drizzle on melted white candy melts or white chocolate for decoration. Enjoy!

Sorry, typo…
The recipe says 2 TB ube powder, and the instructions say 1TBSP. Which is correct?
