Ingredients

  • 1 cup Water
  • 1 cup All-Purpose Flour
  • 2 tablespoons Brown Sugar
  • ½ teaspoon Kosher Salt
  • 1 tablespoon Vegetable Oil
  • 2 tablespoons Unsalted Butter
  • ½ cup Sugar
  • 2 teaspoon Ground Cinnamon
  • Vegetable Frying Oil

Chocolate Ganache dipping sauce

  • ¼ cup Heavy Cream
  • 2 ounces Finely chopped chocolate, you can use dark, bittersweet or milk

METHOD

  • 1)

In a saucepan over medium heat, combine water, 2 1/2 tablespoons sugar, salt and 1 tablespoons vegetable oil and two tablespoons of butter. Bring to a boil and remove from heat. Stir in flour very well until mixture forms a smooth ball

  • 2)

Put the dough into a reusable coated pastry bag with a medium star tip (about the same size as Ateco 824 tip)

  • 3)

Heat oil for frying in deep-fryer or deep skillet or dutch oven to 375 F. It’s important to have a candy/deep fry thermometer to properly control the oil temp. Pipe 5 inch strips of dough into hot oil and use scissors to cut the dough. Fry until golden and drain on paper towels.

  • 4)

Combine 1/2 cup sugar and cinnamon. Roll drained churros in cinnamon and sugar mixture. Serve with chocolate ganache dipping sauce

In a small sauce pan heat the cream on medium high, once it starts to boil turn off the heat and add the chocolate.  Let it sit for about 3 minutes then stir until its smooth

It should be very crispy and slightly chewy and the center will still be very soft. If you prefer a lighter and fluffier churro you can also add an egg after you mix in the flour (just wait a few minutes so the dough can cool so you don’t scramble the eggs) and keep stirring till it’s combined and smooth.
