The first time I tried Truffled Mac and Cheese was at a steakhouse in Chicago a little over a decade ago. It was the most delicious Mac and Cheese I had ever tasted! I’ve been obsessed with it since then, I made a version for the Instant Pot that’s super quick and easy – everything is made in the pot, so no extra pots and pans to wash.

It’s creamy, cheesy and has a lovely hint of truffles, my toddlers even love it. This is great as a side dish for steak, ribs, lobster or holiday dinners.  You could even turn this into a main course by adding some grilled chicken or shrimp. If you happen to have any truffles laying around, shave some to top this for the most luxurious mac and cheese!

Instant Pot Truffled Mac and Cheese

Ingredients

  • 16 Oz Macaroni Pasta
  • 4¼ Cups Water
  • 3 Tablespoons Unsalted Butter, cut into small pieces
  • 1 Teaspoon Kosher Salt
  • ¼ Teaspoon Ground Black Pepper
  • 1 Cup Half & Half, or Cream
  • 11 Oz Truffle Cheese, shredded (about 3 Cups shredded), I use cheese from Trader Joe’s
  • ¼ Cup Grated Parmesan or Pecorino Romano

Method

  • 1)

    Place 4¼ Cups  Water, 3 Tablespoons Butter, 16 Oz Macaroni Pasta, 1 Teaspoon of Kosher Salt and ¼ Teaspoon Ground Black Pepper into the Instant Pot. Give it a stir so the pasta is evenly distributed and most of it is submerged in the water.

    Seal the lid on the Instant Pot and switch the knob to Sealing. Set for High Pressure / Manual on the Instant Pot and choose 4 minutes. Once the timer is up and you hear the beep, slowly turn the knob to Venting with kitchen thongs or a spatula to release the pressure (be careful because the vent might splatter).

    Once the pin drops, open the lid and hit Cancel on the Instant Pot. Press Sauté and choose the “Normal” option. Pour in 1 Cup Half & Half and stir very well. Add 11 oz of Shredded Truffle Cheese and ¼ Cup Grated Parmesan. Stir well until the cheese is melted. Taste and season with more Kosher Salt if needed. Hit Cancel on the Instant Pot and wait 3 minutes before serving, the sauce will thicken up. Enjoy!
