The most famous treat in New Orleans during Mardis Gras is King Cake, it’s an oval-shaped glazed brioche filled with cinnamon, sugar, cream cheese and typically decorated with purple, yellow and green sugar sprinkles. This is my delicious variation, Ooey Gooey King Cake – which is a Gooey Butter Cake with cinnamon sprinkled on top of the crust and decorated King Cake style. There are two layers, the bottom is a chewy, buttery vanilla crust that has crisp caramelized edges and the “gooey” topping is made with cream cheese, butter, sugar and eggs. Any boxed vanilla cake mix will work, but Trader Joe’s has the best one,
the flavor is unmatched & it’s speckled with vanilla beans
The baby is optional, it’s a fun tradition to have a baby “hidden” in a King Cake and the baby will bring luck and prosperity to whoever finds it. Or some people say whoever finds the baby has to host the next Mardis Gras celebration and provide the next king cake. I just put it on top for decoration, I don’t want anyone cracking a tooth by accidentally biting down on one 😂
The best knife to use is a serrated bread knife, you can get a clean cut through the chewy crust
Even though I have a fork posed in this photo for aesthetics, it’s best to just eat like you would a brownie or cookie since the crust is pretty hard to cut through

This is absolutely delicious! Thank you for this recipe—a delightful blending of the ooey gooey with the king cake and it was perfect. I ended up having to bake mine the full hour. The entire top was still jiggling more than I expected but it was darker rather than golden brown, so I took it out of the oven. It turned out a great chewy consistency. The cinnamon flavor is mind blowing. The icing was very good and ended up taking several tablespoons of water. With the colored sugar and tiny baby I ordered from Amazon, it was a huge hit. I highly recommend this!
