In a cold non-stick skillet, add 1 Tablespoons of Butter and 3 Large Eggs. Turn the heat to medium-high and constantly stir with silicone spatula until curds start to form (this will take a few minutes). Sprinkle on ¼ Teaspoon of Sea Salt and continue stir and create small curds until the eggs are just set (do not let them get brown or overcooked) place the eggs onto a plate and set aside.
In a large non-stick skillet, cook bacon until crispy. Keep the bacon fat in the pan and remove the bacon and chop into bits. Add the diced Shallot into the pan and sauté on medium heat until they start to brown, add minced garlic and sauté for 30 seconds. Add ½ Cup Frozen Corn and ½ Cup Frozen Green Peas cook until they are thawed, add 4 Cups of Cooked Rice, Soy Sauce, Granulated Sugar, Ground Black Pepper. Turn the heat to high and stir and toss well so the rice is heated through and the seasoning is evenly distributed. Turn off the heat, add chopped Bacon pieces, scrambled Eggs, half of the chopped Green Onions and stir well. Taste and add more seasoning if needed. Garnish with more Green Onions when serving. Enjoy!
