This is a unique coffee recipe, usually only found in Vietnam. A bartender working at the Sofitel Hotel in Hanoi created this drink in 1946 – this delicious invention came from the shortage of milk and cream in Vietnam, very similar to how Vietnamese yogurt was invented. It’s made by whisking egg yolks, sugar, condensed milk and a little bit of hot coffee together to make the topping. It’s a real treat and very easy to make at home.

Ingredients
- 12 ounces very strong hot Black Coffee, French Roast works well
- 4 Tablespoons Condensed Milk
- 2 Raw Egg Yolks, from Pasteurized eggs
- 1 Teaspoon Sugar
METHOD
- 1)
Place your egg yolks into a mixer and mix on high for 2 minutes.
- 2)
Add 4 Tablespoons of Condensed Milk, 1 Teaspoon of Sugar and mix on high until very thick and frothy (about 3-5 minutes).

With the mixer on high, take 1 Tablespoon of the hot coffee and drizzle into the egg mixture slowly. Mix for another minute on high, the egg mixture should be thick, creamy and tripled in volume.
**If you don’t mix this long enough, it will sink to the bottom of the coffee instead of floating on top.

Pour 6 oz of coffee into your each cup, then top with your egg mixture. You can sprinkle some cocoa powder on top. Mix and enjoy!
