Chuhai (aka shōchū highball or chu-hi) is one of the most popular cocktails in Japan – you’ll find this drink at every bar, izakaya and even canned versions at markets and convenience stores. It’s very customizable because you only need base 3 ingredients, Shochu (Japanese distilled liquor), fruit juice and sparkling water. You can find different flavors available depending on the region of Japan and you can also find seasonal flavors using fresh ingredients. Here’s my original cocktail Yuzu and Butterfly Pea, the butterfly pea adds the most beautiful color and I added dry ice at the end for a dramatic effect. *Watch my 30-second Instagram recipe video here
I ordered the Yuzu Sparkling Water from Weee! an online Asian Grocery Store that delivers Asian ingredients and groceries to your house, use this link to get $20 off your first order. It has a light Yuzu flavor and creates an unsweetend cocktail. You can use Yuzu Sparkling Juice for a stronger yuzu flavor and sweeter drink if you prefer. I used Suncore Foods Butterfly Pea Powder to make the concentrated butterfly pea tea.
