It’s a simple and elegant dish that’s very popular in Rome and with foodies all over the world. The main flavor component is the cheese, so pick out a good quality, delicious Parmesan Cheese, Parmigiano-Reggiano, Pecorino Romano or use a combo of any of these.

Instant Pot Cacio e Pepe Spaghetti Recipe

Ingredients

  • 8 oz Spaghetti, broken in half
  • 1 Cup shredded Parmesan Cheese, Parmigiano-Reggiano or Pecorino Romano
  • ¾ Teaspoon Fresh Ground Black Pepper, and more for serving
  • 4 Tablespoons Salted Butter
  • ½ Teaspoon Kosher Salt
  • 2¼ Cups Water

Method

  • 1)

    Place 4 Tablespoons of Salted Butter into the Instant Pot, choose Saute on High. Once the butter is melted and bubbly, add ¾ Teaspoon Fresh Ground Black Pepper and let it saute for 30 seconds. Add 2¼ Cups Water and ½ Teaspoon Kosher Salt into the pot. Break the spaghetti in half and add it to the pot, wait about 30 seconds so they start to soften slightly and use a spoon or spatula to make sure all the spaghetti is submerged in the liquid.

    Seal the lid, hit Cancel to turn off Sauté mode. Choose High Pressure for 6 Minutes, when the timer is up switch the knob to venting immediately, when the pin drops, open the lid. Add 1 Cup of Parmesan Cheese and stir well until the cheese is melted. Plate and sprinkle on more ground black pepper and parmesan. Enjoy!
