I just can’t get enough of Trader Joe’s Ube Mochi Waffle Mix! My local Trader Joe’s in Austin still had plenty of boxes yesterday, so I grabbed a few more and decided to make something a little fun with it. I’ve made Waffles filled with Nutella and Ube Jam, I’ve also made Ube Mochi Donuts with the mix  and today I made Ube Mochi Churros! Yes Churros!!! They turned out so AMAZING, the churros are extra crispy and have a  fluffy, chewy interior – I coated them in Ube Sugar which makes them look so pretty. Ube Mochi Churros Recipe made with Trader Joe’s Ube Mochi Waffle Mix

Ingredients

UBE SUGAR

  • 1 Cup Granulated Sugar
  • ¼ Teaspoon Corn Starch
  • ¼ Teaspoon Ube Flavoring

Method

  • 1)

    In a large bowl, add 1 Cup Granulated Sugar, ¼ Teaspoon Corn Starch and stir with a whisk to combine well. Add ¼ Teaspoon Ube Flavoring and stir until the flavoring is evenly distributed, the sugar granules should look evenly purple. Set aside until ready to use.

    In a saucepan over medium heat, add 4 Tablespoons Unsalted Butter and ¾ Cup Water, bring to a boil and remove from heat. Add 13.3 oz box of Trader Joe’s Ube Mochi Waffle Mix, stir very well until the mixture is smooth – the mixture will be quite thick.

    In a large bowl, whisk 1 Large Egg, add the ube mochi dough and stir until the egg is evenly mixed in. Put the dough into a pastry bag fitted with a large open star tip (about 0.6-0.75 inch opening)

    Heat 2 inches of oil for frying in deep-fryer or heavy bottom pot to 360°F. It’s important to have a candy/deep fry thermometer to properly control the oil temp. Pipe 5 inch strips of dough into hot oil and use scissors to cut the dough, fry a few at a time and don’t overcrowd the pot. Fry until golden brown and drain on a wire rack. Make sure the oil is around 360°F before frying the next batch.

    After they drain for a minute, toss the churros into the ube sugar and coat well. Serve while warm, Enjoy!
