Trader Joe’s Ube Mochi Waffle Mix is one of my favorite Trader Joe’s products – sadly it’s only available in the beginning of summer so be sure to check your local Trader Joe’s for the mix.  The mochi waffles turn out crisp on the outside and fluffy and chewy on the inside!  Today I used my cute animal waffle maker and filled them with Ube Jam and Nutella for a delicious hand held treat – they’re almost like taiyaki. You could also fill them with Trader Joe’s Cocoa Almond Spread, sweet red bean paste or even vanilla custard.

Trader Joe’s Ube Mochi Waffles filled with Ube Jam and Nutella Recipe

Method

  • 1)

    In a large bowl, add 4 Tablespoons melted Butter and 3 Large Eggs, stir with a whisk until combined. Add ¾ Cup Water and a full 13.3 oz box of Trader Joe’s Ube Mochi Pancake & Waffle Mix, stir well with a whisk until it’s completely smooth.

    Pre-heat the waffle maker. Fill the waffle mold about 80% full, add a dollop of filling, then add more batter to cover the filling, the mold should be filled with batter. If you’re using the same type of waffle maker I have, cook for about 2-3 minutes. When they are done, place them onto a rack. They are slightly crispy on the outside, fluffy and chewy on the inside when you eat them warm. Enjoy!

    *You could also make these in a Taiyaki Pan
