Trader Joe’s Ube Mochi Waffle Mix is one of my favorite Trader Joe’s products – sadly it’s only available in the beginning of summer so be sure to check your local Trader Joe’s for the mix. The mochi waffles turn out crisp on the outside and fluffy and chewy on the inside! Today I used my cute animal waffle maker and filled them with Ube Jam and Nutella for a delicious hand held treat – they’re almost like taiyaki. You could also fill them with Trader Joe’s Cocoa Almond Spread, sweet red bean paste or even vanilla custard.

Fill the waffle maker about 80% full with batter, add a dollop of filling, then add more batter on top to cover the filling
I filled half the waffles with Ube Jam and the other half with Nutella
