Watermelon Kiwi Popsicles Recipe

Ingredients

  • 6 Pounds Watermelon
  • 3 Kiwi, peeled
  • Juice from ½ a Lime
  • 2 Tablespoons Agave Sweetener or Granulated Sugar
  • 3 Tablespoons Chocolate Chips (optional)
  • Popsicle Molds

Method

  • 1)

    Cut up watermelon into cubes & discard the rinds. Place the watermelon cubes, 2 Tablespoons Agave Sweetener and Juice from ½ a Lime into a blender, with blend on medium speed just until the watermelon is broken down – this only took about 30 seconds in my Vitamix. Pour into a large mesh strainer and press out any juice from the pulp, then discard the pulp, you should have about 3½ Cups of Watermelon Juice.

    Fill the popsicle molds about 80% full and freeze without the popsicle sticks for 1-1.5 hours, it should be a partially frozen like a slushy. Add a few chocolate chips to each popsicle mold and use a spoon to mix them into the watermelon.

  • 3)

    Blend the 3 kiwis, then fill the rest of the popsicle molds with kiwi puree, add the popsicle sticks and freeze until solid, about 3 hours. Enjoy!
