This is an awesome way to use up salmon skin if you’re breaking down a whole salmon or if you’re lucky enough to live by H-Mart, they sell 2lbs packages of salmon skin for $5. When you roast these at high heat on the lowest rack of your oven, the skins turn out extra crispy – they’re the salmon equivalent of pork rinds. Enjoys these as a high protein snack or serve with some grilled salmon for a delicous meal.

- 1-2 Pounds Salmon Skin
- Kosher Salt
- Ground Black Pepper

Pre-heat your oven to 450°F and move an oven rack to the lowest level. Sprinkle on some kosher salt and ground black pepper on both sides of the salmon skin and using a very sharp knife, cut the Salmon Skin into even strips. Place parchment paper on a baking sheet and lay the cut salmon skin strips, skin-side down. Once the oven is pre-heated, place the baking sheet on the lowest / bottom rack of the oven. Bake for 14-18 minutes. If the salmon skin is very thin, the pieces will crisp up faster, if they have a slightly thicker layer of salmon on them, they’ll need closer to 18 minutes to crisp up. Drain them on paper towels before serving. Enjoy!
