The perfect cake for anyone who loves matcha green tea – it’s also one of easiest desserts you can make, no-baking required.  The frosting is matcha whipped cream, the cookies soften up and become the “cake” layers – so simple, but delicious!  My kid’s have always loved the classic icebox cake made with regular Oreos, I wanted to make a version I would love – surprisingly, my kids are crazy over this version too. If you somehow manage to find Matcha Oreos (Asia exclusive), that would be awesome in this cake as well.

Matcha No-Bake Icebox Cake Recipe

Ingredients

  • 13 oz Golden Oreo Thins, family size package
  • 16 oz Heavy Whipping Cream, divided
  • 1 Tablespoon Matcha Powder
  • ½ Cup Granulated Sugar
  • Small glass of Milk for dipping
  • 7 inch non-stick Springform Pan

Method

  • 1)

    Bloom the matcha by placing 1 Tablespoon Matcha Powder into a heat safe bowl, heat up 3 Tablespoons of the heavy cream in a sauce pan just until it starts to simmer and pour it into the bowl. Mix very well, it should look like a thin paste, refrigerate for 20 minutes.

    Make sure you whipping cream is very cold, if it’s hot in your house, it’s a good idea to put the whisk and mixing bowl in the freezer for 15 minutes. Pour the rest of the whipping cream into the mixing bowl along with ½ Cup Granulated Sugar (use ⅓ Cup if you want it less sweet) and mix on high until it starts to thicken. Add in the bloomed matcha, and continue to mix on high until medium peaks form – don’t over mix or it will become grainy.

    Line the sides of a 7 inch springform pan with parchment paper. Quickly dip Golden Oreos one at a time into a cup of milk and let the excess drip off and line the bottom of the pan with a layer of cookies. Add in a quarter of the matcha whipped cream and use a spoon to even out the cream. Repeat with layer’s of cookies and matcha whipped cream 3 more times (there should be 4 layers of cookies and 4 layers of cream). Cover the pan well and refrigerate overnight. Top with more whipped cream when serving and dust on some matcha powder, serve slices of cake with your favorite berries. Enjoy!
