I’m just crazy over Thanksgiving leftovers, my family enjoys it for the whole weekend! I make amazing soup from the turkey bones, turkey sandwiches, and these delicious croquettes made with a variety of the leftovers. Your mashed potatoes need to be firm enough to hold it’s shape, if they are too wet/runny they won’t work for croquettes because they will just fall apart. You can also make new mashed potatoes for these, just season with salt and refrigerate them before using. I usually deep fry my croquettes, but since mashed potatoes usually contain cream and butter, they are not firm enough to deep fry – so I just pan fry these. Today I made really simple ones filled with shredded turkey, a little bit of homemade gravy and corn – the filling possibilities are limitless, so use any leftovers you have.
