Instant Pot Mexican Rice Recipe

Ingredients

  • 1½ Cups Jasmine Rice or Long Grain Rice
  • 2 Cups Water
  • 2 Tablespoons Vegetable Oil
  • ½ Cup Tomato Sauce
  • 1½ Teaspoons Knorr Tomato Buillion with Chicken Flavor
  • ½ medium sized Onion, finely diced
  • ¼ Teaspoon Garlic Powder
  • 1 Jalapeño with seeds removed, (optional)

Method

  • 1)

    Pour 2 Tablespoons of Oil into the Instant Pot, choose Sauté on High, once it says Hot add 1½ Cup Jasmine Rice, sauté until it looks light golden, stir constantly (takes about 4 minutes) – sautéing helps the rice kernels keep it’s shape, without this step you end up with mushy rice. Hit Cancel to turn off Sauté mode, add the diced onions, Jalapeño and stir for another minute.

    Add 2 Cups of Water, ½ Cup of Tomato Sauce, 1½ Teaspoons Knorr Tomato Bullion, ¼ Teaspoon Garlic Powder and stir. Seal the Instant Pot lid and choose High Pressure for 4 minutes. When the timer is up, wait 10 minutes then switch the knob to venting, once the pin has dropped, open the lid, remove the Jalapeño and fluff the rice. Enjoy!
