EASY Instant Pot Refried Beans Recipe (No-Soak)

Ingredients

  • 1 Pound Pinto Beans (about 2½ Cups)
  • 1 Garlic Clove
  • Half of an Onion
  • 1½ Teaspoon Coarse Kosher Salt
  • ¼ Cup Lard , or substitute with Corn Oil
  • ½ Cup Shredded Mexican Blend Cheese, (optional)

Method

  • 1)

    Rinse the Pinto Beans, pick them over and add to the Instant Pot, add 1 Garlic Clove and Half of an Onion, 8 Cups of Water and seal the Instant Pot lid and set for High Pressure for 50 Minutes. When the timer is up, wait 15 minutes before switching the knob to venting – once the pin drops open the lid.

    Drain the beans, discard the onion add ¼ Cup Lard into the Instant Pot, and choose Sauté, when it says Hot on the screen – return the beans and garlic to the pot. Add ¾ Cups of Wate, 1½ Teaspoons Kosher Salt, stir well and mash with a potato masher for about 3 minutes, then hit cancel to turn off Sauté mode. Toss in ½ Cup Shredded Mexican Blend Cheese and stir.  You can add a little more water if it seems dry, the beans thicken up a lot more once they start to cool. Enjoy!
