Ingredients
- 1 Pound Shrimp, defrosted, peeled & deveined
- ¼ Cup Mayonnaise
- 2 Tablespoons Sweet Chili Sauce
- ¼ Teaspoon Sriracha Sauce
- 1 Tablespoon Salted Butter
- 3 Tablespoons Finely Chopped Celery
- 1½ Tablespoons Chopped Chives, divided
- 1 Teaspoon Lemon Juice
- ¼ Teaspoon Fine Sea Salt
- ¼ Teaspoon Ground Black Pepper
- 4 Split-top Buns, pan grilled in butter
Method

In a small bowl, make the Bang Bang Sauce by adding ¼ Cup Mayonnaise, 2 Tablespoons Sweet Chili Sauce, ¼ Teaspoon Sriracha Sauce, 3 Tablespoons Finely Chopped Celery, 1 Tablespoon Chopped Chives – stir well, taste and add more Sriracha if you prefer, set the sauce aside. In a large bowl, add 1 Pound of Shrimp, 1 Teaspoon Lemon Juice, ¼ Teaspoon Fine Sea Salt, ¼ Teaspoon Ground Black Pepper and toss well to combine.

In a large skillet, melt 1 Tablespoon of Salted Butter on high heat, grill the shrimp just until they are cooked through – avoid overcooking (it only took about 3 minutes for me). Immediately remove the shrimp and place them into a bowl, wait 3 minutes and drain out any excess liquid from the bowl. Add the Bang Bang Sauce and toss well to coat all the shrimp – taste and season with more salt if needed. Add shrimp to the buns and garnish with chopped chives. Enjoy!
