This is one of those meals that look so cute & fancy, but only takes about 10 minutes to make! I found these cute egg cups for $2 at World Market yesterday, so I made soft boiled eggs & toast “soldiers” for breakfast. The egg whites are cooked through and the yolks are runny and creamy – perfect for dipping!

Instant Pot Soft Boiled Eggs & Toast Soldiers Recipe

Ingredients

2 Extra Large Eggs
2 Bread Slices, toasted, buttered and cut into strips
Salt & Pepper

Method

Pour 1 Cup of Water into your Instant Pot. Place the trivet or basket into the Instant Pot, and stack your eggs on top. Seal the Instant Pot, choose LOW Pressure and set for 1 minute. When the timer is up, wait 3 minutes before switching the knob to venting.

**You can make up to a dozen eggs at once, keep the same cooking time.

Place the eggs into a bowl with ice water for 1 minute. Wipe the eggs dry then place into an egg cup, use a spoon or butter knife to tap around the top of the egg and remove the top egg shell (or use an egg topper). Season with salt and pepper. Enjoy!
