My new favorite wings, Peri-Peri Sauce Chicken Wings! Peri-Peri Sauce is a rich and spicy South African sauce made with African Bird’s Eye Chili – it’s a tangy, slightly creamy hot sauce.  I just picked this up from Trader Joe’s last week and after tasting it, I thought it would be wonderful for wings.  If you can’t get a hold of the Trader Joe’s version you can order Nando’s Peri-Peri Sauce here or check your local supermarket.

 

I air fried the wings in an Instant Omni Pro, but any air fryer oven should work well. If you have the basket type, you’ll probably have to cook the wings in two batches. Baking Powder might sound like odd ingredient for wings, but it slightly changes the ph level of the chicken, which helps to lower the temperate at which the Miallard reaction occurs, helping to develop a brown, crispy texture.Instant Omni Pro Air Fryer

Air Fryer Peri-Peri Sauce Chicken Wings Recipe

Ingredients

  • 2.5 Pounds Chicken Wings, (about 20 flats and drumettes)
  • ⅓ Cup Peri-Peri Sauce
  • 5 Tablespoons Salted Butter
  • ½ Teaspoon Fine Sea Salt
  • ¼ Teaspoon Ground Black Pepper
  • ¼ Teaspoon Garlic Powder
  • 4 Teaspoon Baking Powder
  • 1 Teaspoon Corn Starch

Method

  • 1)

    Place 4 Teaspoons Baking Powder, 1 Teaspoon Corn Starch, ½ Teaspoon Fine Sea Salt, ¼ Teaspoon Ground Black Pepper, ¼ Teaspoon Garlic Powder into a large bowl and stir to combine. Add the chicken wings and toss to coat evenly. Brush the basket or rack with a little bit of oil so the wings don’t stick and place the wings into the air fry basket/rack. Choose Air Fry at 400°F for 35 Minutes and flip half way through.

    OVEN METHOD: Use an oven safe rack and place it on a baking sheet, lightly oil the rack, then stack the wings on the rack. Preheat oven to 425°F and bake for 50 minutes flip the wings every 15 mins.

    **Make sure you are using Baking Powder and NOT Baking Soda – baking soda will make the wings inedible.

  • 2)

    Make the Peri-Peri wing sauce, by adding ⅓ Cup Peri Peri Sauce and 5 Tablespoons Salted Butter in a sauce pan. Turn on low heat and stir until the butter has melted, use a whisk to stir well so the sauce is smooth an emulsified. Taste the sauce, you can add cayenne pepper if you like it spicier. Toss the wings in the sauce and plate. Enjoy!

    This was so good and easy enough for a weeknight, which is my definition of a great recipe. Thank you, sincerely. We served the wings with celery and blue cheese dressing to cool down from the serious spice. Trader Joe’s has 2lb bags of frozen organic chicken wings that worked perfectly. Thank you again.
