If you’re a foodie, you might already know about this Japanese Fried Chicken Rice Cooker Hack that went viral last December. You simply cook rice and left over cold fried chicken in your rice cooker – it’s popular in Japan (where KFC still makes good fried chicken), then everyone all over the world busted out their rice cooker to try this hack. Since I’m in the U.S. & KFC hasn’t been good since the 80’s, I usually go to my favorite fried chicken chain Popeye’s. I purposely got extra chicken just to make this incredible dish. The rice soaks up the delicious seasoning and the chicken is tender and easy to shred. I’ve tweaked the original recipe that was floating around because it was pretty bland – I added a few extra simple ingredients to bring this dish over the top.

Ask for Cajun Sparkle at Popeye’s, it’s their special seasoning, you can use this instead of seasoned salt in the recipe

Fried Chicken Rice Cooker Hack Recipe

  • Prep time: 5 minutes
  • Cook time: 40 minutes
  • Serves: 4-6

Ingredients

  • 2-3 Pieces of Fried Chicken
  • 3 Rice Cooker Cups White Rice, (not standard measuring cup)
  • Water
  • 1½ Teaspoons Seasoned Salt
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Ketchup
  • 2 Tablespoons Salted Butter
  • 3 Green Onions, chopped thin

Method

  • 1)

    Rinse the rice a few times, drain the water well and use Water to fill to the 3 cup line in your rice cooker.  Add 2 Tablespoons of  Salted Butter, 1 Tablespoon Soy Sauce, 1 Tablespoon Ketchup, 1½ Teaspoon Seasoned Salt.  Stir well and place the Fried Chicken into the rice cooker.  Press Cook.

    **If you’re a stickler for crispy skin, you can remove the skin before putting the chicken in the rice cooker and crisp it up in a toaster oven and sprinkle it on top of the rice for a crunchy texture.

    When the rice is done, open the lid, add in half of the chopped green onions and use two forks to shred the chicken.  Remove the bones, mix, taste and add more seasoning if needed.  Garnish with more green onions when serving. Enjoy!
