I loved rice krispie treats as a kid, it was always such a simple and delicious snack that anyone could make. I still enjoy them every once in a while, but nowadays I like to experiment with different flavors. This time, I made Strawberry Rice Krispie Treats using freeze dried strawberries, they add a little bit of tartness so it’s not just a flat note of sweetness typical of classic rice krispie treats.

Trader Joe’s has the best price for freeze dried strawberries, they also stock marshmallows during the summer timeStrawberry Rice Krispie Treats Recipe

Ingredients

  • 20 oz Marshmallows
  • 12 oz Rice Crispy Cereal
  • 2.4 oz Freeze Dried Strawberries
  • 12 Tablespoons Unsalted Butter

Method

  • 1)

Reserve a few slices of freeze dried strawberries if you want to decorate with them, put the rest into a food processor and process until it’s a powder, small chunks are fine. You can also open the freeze dried strawberries bag, remove the air and use a rolling pin or mallet to crush the strawberries instead – set aside. Butter a 13×9 in pan very well.

  • 2)

Add 12 Tablespoons of Butter into a large pot, use med-low heat to melt the butter, add 20 oz of Marshmallows and stir until melted then turn off the heat. Reserve 1 Tablespoon of the Strawberry powder and add the rest of the freeze dried strawberries to the melted marshmallows and stir. Add a 12 oz box of Rice Crispy Cereal and mix well until combined. Pour into the buttered 13×9 in pan, press and even out the rice krispie treats, sprinkle on the reserved strawberry powder on top and set aside to cool. Cut into squares and drizzle with melted white chocolate or candy melts and decorate with freeze dried strawberry slices if you prefer. Enjoy!
