Trader Joe’s EASY Banana Pudding Recipe

This is an easy (cheater) method of making Banana Pudding using Trader Joe’s new Organic Banana Fruit Spread + Greek Yogurt.  The prep time is under 10 minutes, it just needs to sit in the fridge for a few hours before serving.  It’s a little healthier than traditional banana pudding because of the higher protein content & probiotics.

Ingredients

  • ½ Cup Trader Joe’s Banana Fruit Spread
  • 16 oz Trader Joe’s Whole Milk Greek Yogurt
  • 25 Trader Joe’s Vanilla Joe-Joe’s
  • 1 Banana, sliced
  • 3 Tablespoons Powdered Sugar
  • Whipped Cream, canned or homemade (recipe here)

Method

  • 1)

    Separate the sandwiched Vanilla Joe-Joe’s and use a butter knife to scrape off the creme filling and place into a bowl and set aside. Hand crush the cookies so they are broken up, but still chunky (not crumbs).

    Add ½ Cup Trader Joe’s Banana Fruit Spread into the bowl with creme filling. Use a whisk and stir very well to combine. Put the mixture into a fine mesh strainer/sieve and use a silicone spatula to push it through into a large mixing bowl, this will get rid of any lumps. Add 16 oz Trader Joe’s Whole Milk Greek Yogurt, 3 Tablespoons Powdered Sugar and stir well to combine. Taste & add more sugar if you prefer it sweeter.

    Add a layer of cookies to the bottom of six jars / cups. I used 7oz jars, so I filled about ⅓ of the jar with the pudding, then add another layer of cookies. Divide up the rest of the pudding evenly between the 6 jars and top with the rest of the cookies (save the fine cookie crumbs for garnishing). Refrigerate for about 2-3 hours hours so the cookies soften.

    Right before serving, add whipped cream to each jar and garnish with freshly cut banana slices and cookie crumbs. These are best eaten on the same day. Enjoy!
