Instant Pot Carrot Ginger Soup Recipe

Ingredients

  • 1 Pound Baby Carrots or Carrots Peeled and chopped
  • 2 Tablespoons Salted Butter
  • 1 Small Yellow Onion, chopped
  • 1 Teaspoon Fresh Ginger, grated with a microplane
  • 1 Teaspoon Coarse Kosher Salt
  • Pinch of Cayenne Pepper
  • 2½ Cups Chicken Broth or Vegetable Broth
  • ¼ Cup Heavy Cream

Method

  • 1)

    Choose Sauté on the Instant Pot, when it says Hot, add the butter – once the butter has melted sauté the onions for about 2 minutes. Add 2½ Cups Chicken Broth, 1 Pound Baby Carrots, 1 Teaspoon grated Ginger, 1 Teaspoon Kosher Salt and a Pinch of Cayenne Pepper.

    Choose Cancel to turn off Sauté mode. Seal the Instant Pot lid and choose High Pressure and set for 8 Minutes, when the timer is up wait 5 minutes before switching the knob to venting – when the pid drops, open the lid. Carefully pour the soup into a blender, add ¼ Cup Heavy Cream and blend on high until it’s smooth. Taste and season with more salt if needed. Enjoy!
