Every year on April 22, Earth Day marks the anniversary of the birth of the modern environmental movement in 1970. I made a Matcha & Blue Spirulina Latte to celebrate Earth Day. I tried to make it look like the earth, how do you think I did? *Watch my 30-second Instagram video here
Simple ways to celebrate Earth Day:
🌎 You can regrow some of your food from scraps, the easiest one to do are green onions, cut off 2 inches of the bottoms whites of the green onions, place them into a jar and cover the roots with water, place on a sunny window sill and green shoots will emerge within a few days. Change out the water every week
🌎 Make a meal with food you have in the fridge that’s expiring soon or if it’s fruit that’s about to go bad, freeze it for a smoothie
🌎 If you don’t have a drip-irrigation system, water your yard plants by hand instead of using the sprinkler system
I used Blue Spirulina for the health benefits + it’s the most beautiful natural blue coloring, you can also use Blue Butterfly Pea Powder, the color isn’t quite as vibrant. I used So Delicious Coconut Whip for the whipped cream, canned whipped cream may not stick to glass and just float off once you add the milk – homemade whipped cream would work well too
I used fat-free milk to make the Matcha Cold Foam because milk with less fat and more protein will create a light, airy foam that will float on top of the drink. I used Jade Leaf Ceremonial Grade Matcha it’s has a lovely floral note and the most beautiful green color. You can use a regular milk frother or handheld frother.
The adorable bear ice cube is optional, but I think it adds such a whimsical touch to the drink. You can make it by mixing coffee and little bit of milk and fill a silicone bear ice cube mold (buy here), then freeze
