Every once in a blue moon I make steak, I pick out a nice cut and I want it to turn out amazing. Luckily my Instant Pot Ultra has a sous vide function – it evenly cooks your steak to the perfect temp, so you only have to sear it in a cast iron pan before serving. I chose to sous vide at 130°F which usually produces a medium-rare steak, but I like to get a really dark sear, so it was in the pan for slightly longer to get a perfect medium – it was the best steak I’ve ever made.
