Instant Pot Sous Vide Steak Recipe

Every once in a blue moon I make steak, I pick out a nice cut and I want it to turn out amazing. Luckily my Instant Pot Ultra has a sous vide function – it evenly cooks your steak to the perfect temp, so you only have to sear it in a cast iron pan before serving. I chose to sous vide at 130°F which usually produces a medium-rare steak, but I like to get a really dark sear, so it was in the pan for slightly longer to get a perfect medium – it was the best steak I’ve ever made. Instant Pot Sous Vide Steak Recipe

Ingredients

  • 2 Steaks, about 1.75 inches thick
  • Kosher Salt
  • Ground Black Pepper
  • 2 Tablespoons Salted Butter
  • Sous Vide Bags

Method

  • 1)

    Season your steaks liberally with kosher salt and ground black pepper on all sides. Place into sous vide bags and pump out all the air. Place into the liner and fill with enough water to completely submerge the steaks and seal the lid. Choose Sous Vide / Ultra and set for 130°F for 1-2 Hours.  (If you are unfamiliar with sous vide cooking, check out this Serious Eats article)

    Heat a cast iron pan on high heat. Remove steaks from the sous vide bags and pat them dry with paper towels. When the pan is very hot and starts to smoke, add 1 Tablespoon of Avocado or Vegetable Oil.

  • 3)

    Sear the steaks on each side for about 1 minute for medium-rare or about 2 minutes on each side for medium (for medium sear time is dependent on how hot your pan is), always do a touch check so the doneness is to your liking. Add 2 Tablespoons of Salted Butter to the pan and base the steaks for about 10 seconds. Rest the steaks for 5 minutes and sprinkle on more kosher salt before serving. Enjoy!
